This Sunday we will be doing our Christmas pudding….after the success of last years Christmas cake (recipe here if you want to do that again this year…anyone have good pictures of last year's cake they want to show us?) we've decided to do a traditional pudding this year. If you're up for it, join us on Sunday for the details, the following makes two puddings, one for you and one to give away. You'll need to add the following to your shopping list….
Dried fruit, a mix of currents, raisins, sultanans (the bulk of the weight) dried cranberries, apricots, prunes, mixed peel ( or not, if you're me) or what ever else you can find. The total weight needs to come to 1KG.
Grated rind each of a lemon and orange
75g blanched almonds
75g ground almonds
125g self raising flour
teasp each of nutmeg, cinnamon, mixed spice. salt
250g shredded suet or a veggie alternative
250g breadcrumbs, fresh, obviously
125g brown sugar
6 large eggs
quite a lot of brandy/rum/alcohol of choice
50g butter
250ml milk
two pudding shaped bowls and a bit of greaseproof paper, string.
